Wholemeal couscous is produced from coarsely-ground wholemeal durum flour, which is then moistened and mixed with fine wheat flour to produce tiny balls. It is popular in Moroccan cooking, and can be used with spiced vegetable dishes or in salads.
Origin: Italy
Add one cup of boiling water or stock to one cup of couscous.
Leave covered for 5 - 10 minutes.
Fluff with a fork and add some oil or spices, if required.
