Red kidney beans are a fairly large legume, with a full flavour and firm texture. They are frequently used in Mexican chilli dishes, but are also great in other savoury dishes such as stews.

Kidney beans need pre-soaking for about 8 hours before cooking.

Drain and rinse well, before bringing to a boil for about 10 - 20 minutes in a pot with plenty of water.

Reduce heat and simmer for a further 1.5 - 2 hours or until tender.
