Millet is a cereal grain that stems from the grass family. It is easy to cook and can be used in a wide range of savoury or dessert recipes.

To cook, bring to the boil with a 1:3 ratio of millet to water.
Reduce heat and simmer, covered for about 20 - 25 minutes until soft.
Drain and fluff with a fork.
If a creamier texture is desired, cook as above but stir regularly with a wooden spoon, adding a little more water if needed.
