Polenta is milled maize, usually of the yellow variety, and the grain size can be either coarse or fine. It is easy to cook and can be used in a variety of sweet or savoury dishes such as puddings or polenta fries.
Add one part polenta to four parts boiling water and stir for about 5 minutes.
Cook over a low heat for a further 20 - 25 minutes, stirring regularly until thick.
