Organic Butter Beans
Butter beans or Lima beans are large, white beans, that originated in Central & South America. They have a slight buttery flavour, a creamy texture and are great in salads, casseroles or stews.
Pre-soak the beans in cold water for 8 hours or overnight.
Drain, rinse and place in a pot with cold water or stock.
Bring to a boil for about 10 minutes, skimming off any foam that forms, and then reduce the heat and simmer for a further 1 - 2 hours until tender.
